Thickly grated carrot — 1 cup
Double toned milk – 1 cup
Cardamom powder – 1/4th tsp
Chopped almonds – 1 tbsp
Ghee – 1 tsp
Vanilla Ensure Diabetes Care – 3 Scoops
In a thick bottomed pan, simmer carrots in milk until liquid evaporates. Stir the mixture at regular intervals.
Heat ghee in a thick bottomed pan and add the carrot and milk mixture.
Add cardamom powder, half of the almonds and cook over a gentle flame for a few more minutes till the liquid evaporates completely, the halwa turns deep reddish color.
Now take the halwa off the flame, cool and add 3 scoops of Ensure Diabetes Care. Garnish with the remaining almond and serve.
