Winter Warming Cauliflower Soup Recipe

Cauliflower is all the rage at the moment. And with good reason, it’s got an impressive nutritional profile. Just with a few ingredients and the added addition of Glucerna Ready-to-Drink you can rest assure that you are getting the essential 28 vitamins and minerals your body needs.

Method:

  1. Heat oil in a large saucepan over a medium-high heat.
  2. Add onion and garlic and cook for 3 minutes or until onion has softened.
  3. Place cauliflower and potato in the pot and stir for 5 minutes.
  4. Add the stock and thyme leaves, then cover and bring to the boil.
  5. Reduce the heat and simmer for 15 minutes or until vegetables are soft. Set aside to cool slightly.
  6. Add Glucerna Ready-to-Drink and blitz with a stick blender until smooth. Glucerna contains a unique blend of low GI carbohydrates which may help to curb the blood sugar responses in those with diabetes.
  7. Garnish with parsley and cream and serve with crunchy bread
