Creamy corn chowder


Makes: 4 serves

Ingredients:

  • 8 scoops Glucerna Powder
  • 1 tablespoon vegetable oil
  • ½ medium onion, diced
  • 1 stalk celery, diced
  • 1 small carrot, diced
  • 1 small potato, diced
  • 1 cup of corn kernels
  • 1 bay leaf
  • 2½ cups vegetable stock
  • 150 mL full cream milk
  • 2 tablespoons flour
  • 1 rasher bacon, trimmed and chopped
  • Parsley to garnish

Method:

  1. Place bacon into a large soup pot with vegetable oil and cook on medium heat until golden brown. Add onion and celery and stir until softened.
  2. Add carrots, potato, corn, bay leaf and stock and simmer gently for 5 minutes, or until vegetables are tender.
  3. Remove from heat and add Glucerna Powder, flour and milk together and stir until smooth.
  4. Return to heat and simmer gently for further 2-3 minutes and remove bay leaf.
